We got the al pastor nachos and the carnitas nachos and they were fabulous! Have also had tacos from here. Excellent food, friendly service. Decent outdoor sitting area much improved from my last visit.
It was easy to finish the "Super Burrito" that with a tip cost 15. First, the chopped lettuce, tomato, and onion made it taste fresh. The rice and pinto beans didn't overwhelm the dish and bulked it out nicely. The real winners were the thin strips of carne, top notch mole and verde salsas, fresh and quality tortilla, and mildly spicy slivers of what are probably anaheim green chilies. They left a mild heat on my lips with just enough marinated carne to be filling. Great choice to fill up your belly in the middle of a work day without any leftovers to worry about. Most customers seemed to call in their orders beforehand and got quicker service when they spoke Spanish.

We are visiting from Indiana and we’re so lucky to have found authentic style tacos! Every meat option was delicious. The elite was also amazing! The churro really topped it off! Would definitely come back if I lived here. 12/10 I will miss these tacos.
Love both the taco truck and the burger truck! The taco plate was great with beans and rice that are much better than the average Mexican food place, plus they have delicious grilled onions and the julienned radishes too as a garnish, which just adds to the dish. Burgers were great, quality beef, fresh toppings, and the hand cut fries are awesome.
We hired El Chapin Food Truck as our late-night wedding snack, and they were a huge hit! The tacos were absolutely delicious—our guests are still talking about them. Communication leading up to the event was excellent, and everything ran smoothly the night of. We’re so glad we chose them and can’t wait to visit the food truck soon. This is my favorite Mexican food in COS! The ingredients are flavorful and fresh, the spice is on point, and everything I’ve had has been delicious! My favorite dish is probably the Tacos Chapines- maybe it’s all the fresh toppings combined with the crunchy rolled tacos. The tamale plate is sooo good and bring some heat and savory goodness mixed with a fresh bright green salsa and cool crema. The rice and beans are classic home style. The barbacoa tacos are so flavorful, and I love the little bit of crunch with the carnitas tacos! My kids love the burritos! I might be a little addicted to this place... Service is friendly and quick, and the outdoor seating is really fun and relaxing. Pricing is great!
